Aspartic acid is a non-essential amino acid found in many proteins, including those in sugar beets and sugar cane. It is one of the two primary building blocks of aspartame, comprising approximately 40 percent of the molecule by weight. In the human body, it serves as a neurotransmitter and plays a vital role in the urea cycle and gluconeogenesis.
