Methanol, or wood alcohol, is a simple alcohol that is toxic in large quantities. It is a metabolic byproduct of aspartame, produced when the methyl ester group is cleaved in the digestive tract. While the amount released from a single diet soda is less than that found in many natural fruit juices, its presence has been a focal point of safety controversies.
